I was in the mood for a healthy, yummy lunch. I had some basil on the counter and used what I had in the house. Normally I would have used a stone ground mustard but I did
n't have it, so what is a girl to do?
Pesto Chickpea Salad Sandwich- VEGAN and GLUTEN FREE
1 can of chickpeas, cold and drained 1/4 cup diced red onion 3 celery stalks, diced 2 Tablespoons Hellmans Vegan mayo (side note, it is amazing) 1/2 teaspoon mustard of choice 1/2 teaspoon minced garlic 3/4 Tablespoon sundried tomato pesto Fresh basil to taste, chopped
Method: Mash your chickpeas and add all other ingredients. Yes, it really is that simple and takes under 3 mins to prepare.
Toast some gluten free- vegan bread ( I got mine in the freezer section at Ingles) and enjoy the heck of it.
This is a very mild tasting sandwich. Play with it, change it up, spice it and eat it guilt free.
